Pull up a chair.

Bill’s is an Australian pub at heart, with a bistro’s eye for detail. Picture the local you grew up with, then add a proper grill, a wine list that leans proudly Australian and somebody who really cares about the chips. From 1 December 2026, pop in for a quick beer at the bar or settle into a booth for the evening. Either way, we’ll look after you.

Good tucker.

Aussie pub classics, done properly. The menu’s still being written, but expect lamb cutlets and steaks from the grill, crispy-skin market fish and a pavlova worth saving room for.

Cold beer.

Mountain Culture on tap (we’re the first in Hong Kong to pour it), wines from Australia and New Zealand and a few cocktails with Australian names. Once we open, the bar will always be kept free for walk-ins.

Knock-off drinks?

Once we open, weekdays from 4pm to 7pm mean cheaper schooners and house wine, with snacks made for sharing. Bring the whole desk.
